Delinquente “Tuff Nut” - Pet Nat

A Bianca d'Alessano made in a pet-nat style. Most people have never heard of the grape Bianca d'Alessano but it has quietly made bright, citrusy whites in Puglia for centuries.

Here in Australia, the wine bottled before fermentation finishes, so the remaining sugar turns into wild, natural bubbles. It's hazy, unfiltered, and a little funky.
